Ube is the newest and oldest trend. It's a purple yam that is so widely known for its beautiful purple color and subtle flavor. It goes so well with everything although the color may be alarming you may just start becoming an ube fan too.
I love and my kids love ube everything. Ube goes so well with Oreos hence my ube Oreo cupcakes, yes that combination is phenomenal. And if you're not looking for cupcakes my ube pound cakes are amazing and stay so moist for days.

Do we really need a recipe for Ube Rice Krispies Treat?
Yes! The perfect ratio is so important! Too much cereal and it's not gooey and buttery. Not enough buttery and it's just not the same. And you'll need enough ube extract to get that beautiful purple color without it tasting too much like purple.
Ube Rice Krispies Treat Ingredients:

- Butter- Unsalted butter
- Ube Extract
- Salt
- Rice Crispy Cereal (Puffed rice cereal)
- Marshmallows- Mini marshmallows
- Coconut Cream powder/ Coconut Milk Powder
Let's Make Ube Rice Krispies Treat:
Spray a 8x8 inch baking dish with nonstick cooking spray or lightly grease it with butter. You can also use parchment paper and grease it too for easier cleanup.




In a large stainless steel pot, melt the butter over low heat about 2 to 3 minutes later, add the marshmallows, ube extract, and salt.
Lower the heat and stir until the marshmallows are fully melted and smooth. Remove from heat. Add Coconut Powder if using.




Add the rice cereal to the ube marshmallow mixture and stir until everything is evenly coated. Transfer to the prepared pan and gently press into an even layer using a spatula or lightly greased fingers.
Don’t press too hard just enough to hold it together so the bars stay soft and chewy.
Let cool at room temperature for about 1 hour. Cut into 9 squares and enjoy!
Store in an airtight container at room temperature for up to 2 days.

- Coconut Milk powder and coconut flakes
- Small Mochi Pieces

- 1 10 ounce bag Mini Marshmallows
- ¼ cup Coconut milk powder optional
- 4.5 cups Rice Crispy Cereal
- 1 teaspoon Salt
