What is Puff Pastry?
Puff pastry is a light flaky pastry made of dough and butter. It is folded and rolled out repeatedly to create flaky buttery layers. The process of making puff pastry takes patience and time. Which is why a lot of people choose to buy the freezer ready ones.
To prepare the puff pastry for use thaw it out on the counter for 30-40 minutes. If the temperature is warmer where you live it may take less time. I recommend after 20 minutes to check and see if it’s thawed enough to open the layers. Doing this will allow the puff pastry to thaw for quicker use.
Do not let the puff pastry thaw out for longer than one hour.

- 2 tbsp sugar
- 1/2 tsp vanilla extract
Apple filling
- 1 small apple 1/2 inch diced
- 2 tbsp sugar
- 2 tsp cornstarch
- 1/4 tsp cinnamon
- pinch nutmeg
- 2 tbsp water divided
Pumpkin
- 1/4-1/2 cup pumpkin butter
Crumb Topping:
- 1/4 cup all purpose flour
- 1 tbsp brown sugar
- 1/2 tsp cinnamon
- 1.5 tbsp butter softened
Glaze
- 1/2 cup powdered sugar
- 1-2 tbsp milk or water
Instructions
- Before beginning make sure to thaw out puff pastry 30-45 minutes prior to baking.
Cream cheese Filling
- Beat the cream cheese, sugar and vanilla until smooth and then mix in the egg until combined and set to the side.
Apple filling:
- Peel and dice the apple into 1/2-inch pieces and place into a small saucepan. Add in half the water, sugar and cinnamon. Cook until soft for 3-5 minutes.
- Mix the remaining water and corn starch in a small bowl and then add to the cooked apples. The apples will thicken quickly. Take it off the stove and allow it to cool to the side until needed.
Crumb topping:
- In a small bowl combine all the ingredients and mix until combined. There should be small clumps.
Glaze:
- Mix the powdered sugar and liquid of choice until you see thick ribbons. If more liquid is needed add it in slowly or the glaze will be too runny. If the glaze is too runny just add more powdered sugar as needed.
Assembly:
- Preheat Oven to 400℉ degrees
- Cut the puff pastry into 6 pieces by cutting in half and then in thirds.
- In a pastry bag or sandwich bag fill it with cream cheese filling and pipe it into the middle of the pastry. And then top off with filling of choice and the crumb topping.
- Bake for 18-24 minutes until you see the sides rise and are golden brown.
- Allow them to cool for 10 minutes and if you wanted to make the glaze you can drizzle them after 10 minutes of cooling.
