I grew up apple picking as a child and now it’s definitely going to be a family tradition with my kids.
We recently went apple picking and we picked so many delicious apples. We surely couldn’t eat it all, so we shared 2 bags and was still left with one! SO let the apple baking begin!
Making apple pie filling is definitely a great way to use up some apples. You can make it ahead of time and refrigerate it or freeze it for whenever you need to use it.
Apple Pie Filling Ingredients
- Apples: I used granny smith but feel free to use your favorite apples
- Sugar: Feel free to substitute with maple syrup or coconut sugar.
- Cinnamon: A great flavor pairing with apples. Allows the natural apple flavor to shine.
- Nutmeg: Just a pinch of nutmeg added the perfect touch to the apple filling. If you don’t have nutmeg the apple filling will still taste great!
- Lemon: Adds the perfect tartness and freshness to the apple pie filling
- Cornstarch: It’s added at the very end when the apples are done cooking. This will help thicken up the apple pie filling.
How To Make Apple Pie Filling:
First, peel and dice 3 large apples into 1in cubes.
Place them into a medium saucepan and add the sugar, lemon, spices and vanilla. Allow them to cook under tender for 5 minutes on medium heat. Stirring every so often.
Once the apples have finished cooking in a small bowl mix in the cornstarch and the water to create a slurry. Quickly add the cornstarch mixture to the cooked apples and mix. The apple pie filling should thicken immediately.
Take the pot off the stove and allow it to cool. Once cooled transfer to an airtight container.

Can I double the recipe? Yes! Definitely double the recipe because it became more of a snack after it cooled down.

Easy Apple Pie Filling
Ingredients
- 5 cups apples, diced 3 large
- 1/2 cup sugar
- 1.5 tsp cinnamon
- 1/8 tsp nutmeg
- 2 tbsp lemon juice
- 1/2 tsp vanilla extract
- 2 tbsp cornstarch
- 3 tbsp water
Instructions
- Wash your apples and peel, cut and dice them into 1in pieces
- Add your diced apples, sugar, lemon juice, cinnamon, nutmeg and vanilla into a medium sized saucepan. With a wooden spoon stir the mixture until the apples are evenly coated.
- Cook the apples on medium heat for 10-15 minutes stirring every so often until they are tender and soft. Turn the heat to a low simmer.
- In a small bowl add the cornstarch and water and mix until you see no more dry clumps. Add this to the cooked apple mixture and allow it simmer on low for 2 mins. You should notice the mixture start to thicken.
- Turn off the stove and let the apples cool down. Once the apples have cooled you can place them into a container and refrigerate.
