Easy Apple Pie Filling

Delicious apple pie filling with the perfect amount of spice. Perfect to top ice cream, pancakes, pies and cheesecakes.

Ingredients
  

  • 5 cups apples, diced 3 large
  • ½ cup sugar
  • 1.5 teaspoon cinnamon
  • teaspoon nutmeg
  • 2 tablespoon lemon juice
  • ½ teaspoon vanilla extract
  • 2 tablespoon cornstarch
  • 3 tablespoon water

Instructions
 

  • Wash your apples and peel, cut and dice them into 1in pieces
  • Add your diced apples, sugar, lemon juice, cinnamon, nutmeg and vanilla into a medium sized saucepan. With a wooden spoon stir the mixture until the apples are evenly coated.
  • Cook the apples on medium heat for 10-15 minutes stirring every so often until they are tender and soft. Turn the heat to a low simmer.
  • In a small bowl add the cornstarch and water and mix until you see no more dry clumps. Add this to the cooked apple mixture and allow it simmer on low for 2 mins. You should notice the mixture start to thicken.
  • Turn off the stove and let the apples cool down. Once the apples have cooled you can place them into a container and refrigerate.
