Caramel is one of those things that your scared of making but once you learn how to make it with practice, you'll be making it for everything. Homemade salted caramel in unbeatable, trust me.
I love Caramel and especially Salted Caramel with sea salt flakes. It pairs so well with some of my favorite macarons and cake fillings. And if I'm lucky enough and have leftovers, I'll use some for my iced coffees.
But I understand how scary it can be. I remember being so scared of making it when I was in culinary school. But now that I know how to make it, I make it all the time and it's really easy. Follow along step by step and you'll learn how to make it too!
Salted Caramel Sauce Ingredients:
- Sugar
- Water
- Butter
- Vanilla bean paste
- Sea salt flakes
- Heavy cream
Step By Step Instructions:
- To Begin: In a heavy-duty saucepan place the sugar and water on the stove at medium heat.
- Dissolve the sugar and water: Once the sugar has dissolved evenly into the water bring the heat higher to medium high and allow the sugar to boil.
- Caramlizing the sugar: You'll notice the sugar mixture bubble. At this point DO NOT stir the sugar. Continue to let the sugar cook and slowly change color. If you stir the sugar this will create sugar clumps and your caramel sauce won't be smooth and silky. I like to lightly swirl the pan, so the amber color spreads all around the pan.
- Add heavy cream and whisk: Once the sugar has turned into a caramel color remove it from the heat and add in the heavy cream and whisk. it will bubble even more vigorously so make sure it doesn't spill on your hand or arm because it is very hott.
- Add in the remaining ingredients: the butter, vanilla and salt. Allow the sauce to cool in the pan and then pour into a jar.

How to Make Salted Caramel Sauce
Ingredients
- ¾ cup sugar
- ¼ cup water
- ½ cup heavy cream
- 8 tablespoon butter
- 1 teaspoon vanilla paste
- Sea Salt Flakes
Instructions
- In a heavy sauce pan add in the sugar and water and place on medium to high heat.
- The sugar mixture will bubble and then will begin to caramelize.
- Once the color has reached an amber color take it off the stove add in the heavy cream and whisk carefully.
- Add in the butter, vanilla bean paste, and the sea salt flakes. Adjust the salt to your liking.
- Allow it to cool and pour into a jar when cooled and keep in the refrigerator for up to 2 weeks.
