Peach Cobbler for one

Ingredients
  

  • 1 peach, large skinned
  • 2 tablespoon butter, melted
  • 3 tablespoon brown sugar
  • ¼ cup all purpose flour
  • ¼ teaspoon baking powder
  • pinch of salt
  • 3 tablespoon milk
  • ½ teaspoon cinnamon
  • ½ teaspoon cinnamon

Instructions
 

  • Preheat the oven to 375
  • In a medium sized bowl add the melted butter and brown sugar and mix
  • Add in all the dry ingredients and then slowly incorporate the milk.
  • Mix until everything is just combined.
  • Melt one tablespoon of butter and put it in your pan of choice. I used a very small cast iron skillet but feel free to use a medium sized ramekin.
  • Pour the batter into the pan and then place the sliced peaches on top.
  • Place the peach cobbler on top of a baking pan to reduce spillage in the oven and bake it for 20 to 25 minutes depending on the type of pan you used to bake the cobbler. Bake until the top of the cobbler is browned.
  • Serve warm with a scoop of ice cream!
