Easy Raspberry Filling Recipe

Making Raspberry filling has never been easier. It takes just two ingredients and under 15 minutes to make this raspberry filling is perfect and so simple!

Raspberry Filling

You will never understand the power of what raspberries can do to a cake. It can take a simple vanilla cake and upscale it to be the most amazing raspberry filled vanilla cake. 

Why you need this recipe:

  • Two ingredients! Yes, you can be a bit more complex and add lemon juice and lemon zest, but I think this two-ingredient raspberry filling does just the job!
  • Easy: It's easy to remember! It's a 2:1 ratio, meaning 1 cup of raspberries and ½ cup of sugar.

  • Raspberry: Use fresh or frozen raspberries 
  • Sugar: I used regular granulated white sugar, but feel free to use any other sugar you have, it may change the flavor depending on the sugar used. 

Let's make Raspberry Filling:

In a medium saucepan add the washed fresh or frozen raspberries

Add sugar and cook on medium heat.

Mash the raspberries once the natural juices start to come out.

Allow the raspberries to cook on medium low heat for 5 to 10 minutes or until the liquids have reduced.

The mixture will look a bit thin but will thicken later as it cools.

Strain the seeds(optional)

Use a fine mesh strainer and strain the seeds out, the filling will not be as thick.

Storage:

Store filling in an airtight container in the refrigerator for up to one week and 3 months in the freezer. 


How to use Raspberry Filling:

  • Cake fillings- Pipe a border of frosting around the cake and filling the inside of the cake with raspberry filling. the border is necessary unless you want the raspberry filling to spill out
  • Cupcake fillings- Core the middle of the cupcake out and fill the cupcake with this filling for a delicious delight like these Raspberry Cupcakes.
  • ​Macarons: Fruit fillings have more moisture than regular macaron fillings, paint the inside of the macaron with chocolate and then fill for longevity.  
  • Cookies: Use this filling for thumbprint cookies or Linzer cookies
  • Replace the filling in these better than boxed toaster strudels with this filling
