Easy, quick peach cobbler can be whipped up and eaten in probably 40 mins.
I’m not an expert when it comes to cobblers especially peach cobblers, but I would say this one is pretty good. Even for a non-cobbler fan like me, I might just start making it more often.
While my recipe isn’t the usual way to make peach cobblers, I wanted it to be easy and not create so many dishes, so I decided not to cook the peaches on the stove top. My peaches were also really sweet and ripe so I felt I could skip that step.
Can I use canned peaches?
Yes, just make sure to drain the peaches
Can I double the recipe?
Yes, when I originally created this recipe, I thought it was a serving for two but after eating it all in one sitting, I changed it to one. Just a warning…..
Can I substitute and use other fruits?
Yes, I would change the cinnamon and add vanilla and probably use granulated sugar instead of brown sugar depending on the fruit you’re using. You might also want to cook the fruit over the stovetop depending on the fruit you choose.
Can I use granulated sugar instead of brown sugar?
Brown sugar creates a deeper flavor in the batter. It pairs so well with the peaches and the cinnamon I would try my best to not leave it out but if you don’t have it just use regular sugar.
Peach Cobbler for one
Ingredients
- 1 peach, large skinned
- 2 tbsp butter, melted
- 3 tbsp brown sugar
- 1/4 cup all purpose flour
- 1/4 tsp baking powder
- pinch of salt
- 3 tbsp milk
- 1/2 tsp cinnamon
- 1/2 tsp cinnamon
Instructions
- Preheat the oven to 375
- In a medium sized bowl add the melted butter and brown sugar and mix
- Add in all the dry ingredients and then slowly incorporate the milk.
- Mix until everything is just combined.
- Melt one tablespoon of butter and put it in your pan of choice. I used a very small cast iron skillet but feel free to use a medium sized ramekin.
- Pour the batter into the pan and then place the sliced peaches on top.
- Place the peach cobbler on top of a baking pan to reduce spillage in the oven and bake it for 20 to 25 minutes depending on the type of pan you used to bake the cobbler. Bake until the top of the cobbler is browned.
- Serve warm with a scoop of ice cream!
