Easter Bunny Chow Ingredients:
This sweet snack mix is so much fun and is made with just a few simple ingredients and endless options.
Rice Chex Mix: There are so many different flavors to choose from. I recommend choosing a plain unsweetened one, so it doesn’t create an overly sweet bunny chow.
White chocolate chips: You can use any white chocolate you want. If your feeling fancy White chocolate bars are typically better quality in taste and quality.
Almond Butter: I recommend using creamy almond butter to ensure the chocolate butter mixture evenly coats the chex mix.
Butter: Use unsalted butter. Coconut oil can also be a great substitute.
Pretzels: Tiny twist creates better clumps, but if you prefer pretzel sticks, they will be just as delicious.
Annie’s Birthday Bunnies: What better way to make an Easter bunny chow than using Annie’s birthday bunnies.
Easter M&M’s: Feel free to replace them with Cadbury mini eggs, peanut m&m, Jordan almonds. Anything you like.
How to make bunny chow
In a microwave-safe bowl add the butter, almond butter, and white chocolate chips. Melt butter and chocolate mixture in 30-second intervals stirring in between each time with a rubber spatula until its creamy.
In a large mixing bowl add the rice Chex cereal, pretzels, bunnies, and M&M’s.
Pour the chocolate mixture over the cereal mix.
Use a large spoon or clean hands and mix everything making sure everything is well coated.
Line a baking sheet with a piece of parchment paper and pour over the chocolate cereal mix.
Spread the mixture around the cookie pan making sure there aren’t huge clumps but leaving some clumps for the perfect snacking bite.
Refrigerate the tray in the fridge for 10 to 15 minutes or until firm.
Pour the cold cereal into a large bowl and then pour over the powdered sugar shaking it to ensure it’s all coated.
Ziploc bag Method:
Add the chex mix mixture into a large ziplock bag and then pour the melted white chocolate mixture over the cereal. Close the bag and then carefully spread the chocolate so it evenly disperses and coats the cereal. If you want to keep it simple and easy skip the refrigeration step and just add the powdered sugar onto the chocolate-coated cereal and shake the bag until the everything is coated in powdered sugar. A brown paper bag will also work just as well if you have one!

Overheating the chocolate and nut butter mixture. Sometimes overheating the butter can cause it to harden and burn. So, make sure to melt and stir every 30 seconds until it’s smooth and combined.

Wax paper or aluminum foil works well! We are just trying to make it easier during clean-up time.

What kind of chocolate do I use?
Chocolate chips work just as fine. I’ve seen others use chocolate coating or almond bark. If you’re feeling fancy baking bars would be a great option if you are looking for a fancy way to make easter bunny chow.
Can I replace the almond butter with another nut butter?
Yes. Almond butter is relatively much more expensive than peanut nut butter and if it’s already what you have on hand then please do so. I will admit that I love the combination of almond butter and white chocolate together.
Can I make this healthier?
I certainly haven’t tried but I’m sure you can. Just simply switch out the ingredients for a healthier alternative and use refined sugar-free powdered sugar instead.
