Matcha Brownie Ingredients.
Simple ingredients to make the best matcha brownies

- Flour: All Purpose flour works great!
- Matcha Powder: Use a culinary grade one. I used Aiya Culinary matcha in this recipe.
- Sugar: A blend of white sugar and brown sugar is used in these matcha brownies
- Oil: A neutral oil like canola or vegetable oil is best.
- Butter: Use unsalted butter, no margarine here
- Eggs: I always use large eggs at room temperature
- Vanilla extract:
- White Chocolate: Feel free to use white chocolate chips for this recipe or white chocolate bars. I prefer chocolate bars.

Let's make Matcha Brownies:
Preheat Oven to 325F.
Line an 8x8in square pan with parchment paper and set aside until needed.

- With a heat proof bowl, add the butter, white chocolate and oil and melt in microwave until fully melted melting in 30 second increments making sure not to burn the white chocolate. let is sit to the side until just warm.

- Once the white chocolate mixture is slightly warm add the sugar and eggs.

- Sift dry ingredients (flour, salt, baking powder, and matcha) over the wet ingredients and just fold in until there are no more dry clumps.

- Fold in the white chocolate chunks or variations.

- Pour the matcha brownie batter into the prepared baking pan.

- Bake matcha brownies in middle rack of the oven for 25 minutes.
- Once brownies are done baking allow it to fully cool before enjoying.
Optional matcha ganache:
In a heatproof bowl add in your heavy cream and white chocolate. Melt in 30 second increments until the melted white chocolate is smooth. Sift the matcha in and mix until smooth and then pour over the matcha brownies. Allow the ganache to fully set before cutting.

Store cut brownies in an airtight container for up to 5 to 7 days or freeze for up to 3 months.

What is Matcha?
Matcha is fine powder that in grinded from green tea leaves. The green tea leaves are harvested at different times making the quality and grades different.
What kind of Matcha should I use?
There are different types of matcha grades and so many different brands out there. So, which do we choose? I'm no matcha expert but I know what works and is decent enough.
- Culinary- typically best for baking. cooking or making matcha lattes. The tea leaves are harvested later and not so much when they are still young.
- Ceremonial- Highest quality of Matcha and is usually used for enjoying without milk or sweetener added.
Notes- I will say not all ceremonial or culinary Matchas are made the same. Read more here if your interested in learning more about matcha powders.

How can you tell your if you have a good quality matcha powder?
- Color- Look for a bright green tea powder. A lower quality matcha powder will look dull.
- Grainy- A high quality matcha will also be less grainy and smoother.
- Taste: Different brands have different flavors but overall, the flavor shouldn't be overall bitter.
It might be an extra cost but will be worthwhile in your baked goods to get the best matcha powder you can get your hands on.
Ways to enjoy these Matcha Brownies:
- Warm Matcha with a scoop of Vanilla or strawberry Ice Cream
- Cold from the refrigerator, especially with the matcha glaze on top! (My personal favorite)
Tips to making chewy matcha brownies
Try to weigh the flour in the recipe. Too much flour could make your brownies cakey and not give you fudgy matcha brownies. If using a measuring cup
Adjust baking time according to your oven. 5 to 10 minutes before the 25-minute mark check the brownies and then add additional time according to your oven.

FAQ
Next time try to whip the eggs and sugar together until light in color and then add the melted chocolate and butter mixture to it.
With a sharp clean knife, you'll have to clean it every time you make a cut.
Another tip is using a plastic knife, yes, those plastic disposable knives you get from the restaurants when you order to go food. Don't be alarmed it works!!

Thoughts from the Recipe Creator:
These aren't really matcha brownies. Nothing honestly can replace chocolate brownies. There is just something about the chocolate and cocoa powder in regular chocolate brownies that you can't mimic with matcha brownies.
I tried and tried this recipe over and over again until I was satisfied. The beginning of my trial and error were gooey brownies and maybe that's the texture you want in your matcha brownies, but it didn't taste right to me. The fudgy texture was almost like uncooked fudgy brownies. Developing these matcha brownies was a difficult task so these to me are more like matcha blondies and brownies put together. But overall I am very happy with this recipe and how it turned out! I hope you do enjoy and love it too!
