Brownie Birthday Cake Bars– When brownie meets cake literally! These brownies are soft and fudgy topped with a thin chocolate frosting and sprinkles.
I know cakey brownies aren’t for everyone. But I know that there must be a few people out there who love cakey brownies. If this is you, I made this JUST FOR YOU!
If a chocolate cake and a brownie had a baby, this would be the one. When you eat this brownie, you’re not sure whether it’s a cake or a brownie.
The cake is fudgy and soft with a lightly sweetened chocolate frosting.

How to make Brownie Birthday Cake Bars?
Melt the butter in the microwave or a saucepan until it’s hot and melted.
Chop the chocolate bar into pieces and then pour the butter into the chocolate. Stir until smooth and set aside to cool.
In a large bowl add in the sugars, oil, eggs and vanilla and mix well. Add in the cooled down chocolate mixture and mix until the ingredients are incorporated.
Add in all the dry ingredients and fold until mixed well.
Line an 8×8 pan with parchment paper and then pour and spread the batter evenly. Bake for 20 minutes or until a toothpick is slightly clean.
Allow the brownie to cool down and then make the butter cream.
Whip the softened butter with melted chocolate and vanilla. Once incorporated add in the powdered sugar and beat until fluffy.
When the brownie is cooled spread the frosting on top of the brownies and then sprinkle with sprinkles.
Brownies should be stored in an airtight container and can be left at room temperature for 2 to 3 days.

Chocolate substitutions: I used Dark chocolate in this recipe but feel free to use semisweet chocolate if that’s what you have or can find. The taste will be slightly different upon the chocolate used.
Do I have to make the frosting? Nope! You can simply skip out on this step and just enjoy them plain!
Can I add nuts to the brownies? I haven’t tried adding nuts, but I don’t think it would be a good idea just because the brownies are cakier.
Can I freeze them? Yes! Store them in an airtight container and freeze them up to 1 to 2 months. If you don’t have freezer space for an airtight container, refrigerate the bars until the frosting sets and then individually wrap the brownies in saran wrap and store into a freezer Ziploc bag. This way you can thaw one out and enjoy them when you want.

Brownie Birthday Cake Bars Recipe
Ingredients
- 3/4 cup all purpose flour
- 1/2 tsp baking powder
- 2 Large eggs
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1/4 cup oil
- 1 tsp vanilla extract
- 2/3 cup dark chocolate chopped (chocolate of preference)
- 4 tbsp butter melted
- 3 tbsp cocoa powder
Chocolate Frosting
- 1/3 cup semisweet chocolate
- 4 tbsp butter softened
- 1/2 cup powdered sugar
- sprinkles
Instructions
- Preheat Oven to 350
- In a small saucepan melt the butter and then pour over the chopped chocolate. Mix until smooth and then add in the cocoa powder.
- Add eggs, sugars, oil and vanilla into a large mixing bowl and whisk until incorporated.
- When the chocolate butter mixture is cooled add it into the egg mixture and mix until just combined.
- Fold in the dry ingredients to the batter just until there are no flour clumps.
- Pour the brownie batter into a parchment-lined 8×8 pan and bake for 18-20 mins. Insert a toothpick into the center of the brownie, the toothpick should not be clean there should still be some wet crumbs on it.
- Once brownie is done allow it to cool and make the frosting.
- Melt the semisweet chocolate and set to the side to allow it to cool.
- Beat the butter until fluffy and then add in the powdered sugar and the cooled melted chocolate.
- When the Brownie has cooled spread the frosting on the brownies and sprinkle with sprinkles.
- Enjoy the brownies!
