Why you need this recipe:
- Two ingredients! Yes, you can be a bit more complex and add lemon juice and lemon zest, but I think this two-ingredient raspberry filling does just the job!
- Easy: It's easy to remember! It's a 2:1 ratio, meaning 1 cup of raspberries and ½ cup of sugar.
Raspberry filling ingredients:

- Raspberry: Use fresh or frozen raspberries
- Sugar: I used regular granulated white sugar, but feel free to use any other sugar you have, it may change the flavor depending on the sugar used.
Let's make Raspberry Filling:

In a medium saucepan add the washed fresh or frozen raspberries

Add sugar and cook on medium heat.

Mash the raspberries once the natural juices start to come out.

Allow the raspberries to cook on medium low heat for 5 to 10 minutes or until the liquids have reduced.
The mixture will look a bit thin but will thicken later as it cools.
Strain the seeds(optional)
Use a fine mesh strainer and strain the seeds out, the filling will not be as thick.
Storage:
Store filling in an airtight container in the refrigerator for up to one week and 3 months in the freezer.
